Broccoli , Coconut & Lime Soup

I make broccoli soup incredibly often. In several ways. This is one of my favorite recipes. Easy to make, super satiating, full of fibers and all incredibly healthy properties of the so-called “cruciferous” foods (cauliflower, broccoli, kale, green cabbage, red cabbage, Brussels sprouts) – especially for wheelchair users. Onion and garlic are immune boosting ingredients. Coconut milk is rich in essential fats which helps release excess stored fat, and nourishes skin and hair.

  • 400 ml coconut milk
  • 1 onion
  • 2 garlic cloves
  • 1 thumb of fresh ginger
  • ½ chilli (more or less, to taste)
  • 4 kaffir lime leaves
  • 1 head of broccoli
  • 2 limes
  • Boiling water, as needed
  • Sea salt and freshly ground pepper

  1. Pour your coconut milk in a pan
  2. Peel and coarsely grate your onion. Peel and chop your garlic and ginger. Thinly slice your chilli. Add it all and the kaffir lime leaves to the coconut milk. Simmer over medium heat for 5 mins
  3. Finely chop your broccoli. Trim the woody bits from the stalk and chop up all the softer bits
  4. Add the broccoli to the coconut milk
  5. Grate in the lime zest. Add a good squeeze of juice
  6. Bring the soup to the boil and turn the heat down as soon as the soup boils. Let it cook for approx. 10 minutes
  7. Take out the kaffir leaves
  8. Puree the soup with a hand blender (or in a blender) until smooth and creamy
  9. Serve in a nice bowl, and garnish with some hemp seeds and pumpkin seeds and an extra dash of coconut cream / milk
